How do I know...? (Lighting/Exposure)

how know if exposure going correct, read "understanding exposure" im still kinda confused on light metering correct exposure example bryan peterson says " had set exposure aiming tripod-mounted camera , lens towards blue sky. shutter speed set 1/500 sec., adjusted aperture until f/8 indicated correct exposure"

dont understand "i adjusted aperture until f/8 indicated correct exposure"

can me out?
